Meal Planning Monday {23rd March}

We were naughty last week and had takeaway on Saturday so we are having the stir-fry this week.

This is our meal plan for the week.

Chicken parmigiana is a new one for us but my daughter saw it on a cookery programme so we are giving it a try.

There will be a roast on Sunday just not sure what yet.

Our plan is a bit pork heavy this week but its so good!

Meal Planning Monday {16th March)

This is what we have planned for this week.

Meal Planning 16th March

The ragu which currently blipping away in the slow cooker is made with yesterdays left over pork and smells so good!

Sausage and bean stew is a new favourite of ours and we use flageolet beans but you can use any type of beans.

The beef pie is homemade. The filling will be cooked overnight in the slow cooker and then left to cool ready to be topped with puff pastry (ready made).

Chicken and pasta bake is a firm favourite in our house.

We often have pizza on a Friday but we are mixing it up this week with hot dogs served with homemade potato wedges.

A fake away for us on Saturday with pork stir-fry and then we will cook some mini spring rolls and serve with prawn crackers.

We don’t always have a roast on a Sunday so this week is lasagne.

They have written Kids Don’t Come With a Manual – The Essential Guide to a Happy Family Life together so all parents can have the tools to face every parenting challenge.

We really enjoyed this book; it’s spilt into 7 Chapters which cover most areas of parenting issues:

Chapter 1: How to prevent power struggles and other issues

Chapter 2: How to (re)connect with your children

Chapter 3: How to be a good role model to your children

Chapter 4: How to listen so children will want to talk

Chapter 5: How to talk so children will want to listen

Chapter 6: How to effectively deal with ‘mis’behaviour

Chapter 7: How to develop your children’s self-responsibility and emotional resilience

We found this book really easy to read and navigate. It’s full of practical advice and really makes you think about what kind of parent you are.

Meal Planning Monday {9th March 2015}

After many requests we have decided to take part in Meal Planning Monday again. We never stopped meal planning as it is a great way to save money and stop waste but we did stop blogging about it.

This is what we are having this week:

We write it on the blackboard in the kitchen as we find we stick to it better.

The chicken and mushroom pie is made from left over roast chicken which we has yesterday. We are cheating with ready made puff pastry but it makes life a little easier.

Sausage tray bake it a really simple one pot dish. Just throw sausages, new potatoes and whatever veg you fancy in a baking tray, a drizzle of oil and some herbs and cook for 30 minutes. This week we are having carrots, butter nut squash and sweet potato.

The turkey meatballs are made using the same recipe as our Pork Meatballs but we just use turkey mince instead.

The kids love to help make the meatballs and the chicken nuggets. The chicken nuggets are a total bargain this week thanks to the Lidl half price weekend offers, a pack of diced chicken was just £1.27! Yes the freezer is filled.

We buy the pizza bases and then top them with our own toppings.

I love a good casserole and I have some chicken thighs in the freezer which will be perfect in this and we will make some herby dumplings to go on top.

Pork takes very well to slow cooking so I pop mine in the slow cooker with a bit of water in the bottom and some bay leaves and leave to cook all day. I buy a large joint so I can use it make two meals.

Its not long until Mother’s Day which means dad/mum go into a panic about what to buy them from the children, second guessing what they want without actually asking what they would like.

So we thought we would help you and ask mums what they really want for Mother’s Day and this is what they said.

To have a nice day with my boys without worrying about cleaning the house @astrongcoffee
